Summer is my favorite season and one of the things I love most is all the fresh veggies that are available. I really love salads and often make a meal out of one of my salads.Some of my salads do require quite a bit of chopping, cutting, dicing etc but I find it is always worth the effort. One of my tricks is to wash all my veggies when I buy them, then part of the job is already done. These two recipes are very easy and straight forward. And since I love broccoli, it would make sense I would have at least one broccoli salad in my collection:)
Broccoli Salad:
Ingredients:
5 cups broccoli florets
8 slices bacon, cooked crispy and crumbled
1 red onion, diced
1/2 cup cheddar cheese, grated
6 tbsp. mayonnaise
2 tbsp sugar
2 tbsp vinegar
Toss the broccoli, bacon, onion and cheese in a large bowl. Mix the mayo, vinegar and sugar in a separate bowl and put on salad. Toss well. I like to chill this salad before serving but that is a personal preference.
Serves 6
Peas & Bacon Salad
Ingredients:
3 cups peas, cooked and cooled
6 bacon slices , cooked crispy, crumbled
4 green onions, sliced
1/4 tsp dill weed
1/3 cup sour cream
Salt and pepper to taste
Combine all ingredients in a bowl and serve.
