I love chickpeas. They are healthy, tasty and very filling:) This is an easy, tasty recipe that I hope you enjoy.
8 oz wagon wheel pasta (you may use any pasta shape you like)
1/4 cup extra virgin olive oil
1 clove garlic, minced
1 small onion, chopped
1/2 tsp dried Italian seasoning
3/4 tsp salt
2 lbs. (about 10) plum tomatoes, quartered
1 – 15 oz can of chickpeas, drained and rinsed
1 cup fresh basil thinly sliced
1/2 cup parmesan cheese
Cook the pasta according to package directions and drain. Reserve 1/2 cup of the water. In a large non stick skillet heat 1/4 cup of oil. Add onion, garlic, italian seasoning, salt and cook for about 3 minutes until tender. Add tomatoes and chickpeas for 5 minutes, stirring occasionally. Stir in the pasta and reserved cooking water. Cook and stir until heated throughout, about 3 minutes. Remove from heat and stir in the basil. Put into a serving bowl and drizzle with 1tbs oil and Parmesan cheese. Serve immediately. Serves 4.
